St. Patrick’s Day Cheesy Kale Chips
[Serves 2]
INGREDIENTS
1 head of kale torn into large pieces
2 teaspoons extra virgin olive oil
1 tablespoon nutritional yeast
sea salt and pepper
Kale has a thick rib along the centre. If the kale leaves are whole, remove this stem before cooking.
Wash the kale and remove excess moisture in a salad spinner.
Toss kale with oil and season with nutritional yeast and sea salt.
Bake for 15 – 20 minutes at 180º or until crispy – being careful not to burn.
