Kale contains four times the amount of vitamin C and twice as much selenium as spinach does. It is also a source of nutrients like vitamin E and beta-carotene. These are all important for supporting a healthy immune system. Perfect for fighting off any bugs picked up while standing in the cold or marching in parades.

☘️St. Patrick’s Day Cheesy Kale Chips☘️

[Serves 2]


1 head of kale torn into large pieces

2 teaspoons extra virgin olive oil

1 tablespoon nutritional yeast

sea salt and pepper

Kale has a thick rib along the centre. If the kale leaves are whole, remove this stem before cooking.

Wash the kale and remove excess moisture in a salad spinner.

Toss kale with oil and season with nutritional yeast and sea salt.

Bake for 15 – 20 minutes at 180º or until crispy – being careful not to burn.
